Let The Holiday Begin With A Lemon

Let the holiday begin with a lemon... hummm... An old fashion scratch lemon pie I mean..... This is the best way I can share it with you all. It is really very hot as it has only been from the oven browning the meringue long enough to take the picture and transfer to computer.... I was looking at one of my magazines and it had a lemon pie pictured in it and instant inspiration..... I have used this recipe for over 40 years.... Not too tart, not too sweet, just lip smackin' delicious.

Lemon Meringue Pie

Mix in saucepan... 1 1/2 cup sugar and 1/3 cup cornstarch.... Gradually add 1 1/2 cup cold water... Stir this till very combined..... before placing this in stove to cook[ I like to make a double boiler out of a larger pan as I don't have a double boiler to keep the mixture from sticking. I usually start mixture on burner and transfer over water one the mixture is heated}Separate 4 eggs ... whites in a larger bowl for meringue.... yolks in small dish for beating.... Place your sugar, water and cornstarch mixture on burner and thicken.... Then very , very slowly add your egg yokes, beating constantly... then add 1/4 cup lemon juice...and when thicken mixture is about ready add 3 tablespoon butter....

Pour this mixture into baked pie crust..... Beat your egg whites till thickened ... add 1/4 cup powered sugar and a teaspoon vanilla, beat a couple seconds till all combined.... Add fluffy mixture over crust, filling and bake in hot 400 degree over till golden brown... Remove from oven and share your treat with someone you love.....You may get a pucker.....

That pie looks so yummy! I don't make pies. (except a chocolate one that is no bake)My mom is the best pie maker, but I never picked that up!

Wow that looks lovely. I could never make it like that...lols. I am no good at fixing desserts and since i'm a diabetic I just have to stay clear and admire yours...lols.
